Cheesecake Strawberry Bread

Cheesecake Strawberry Bread
I just love, love, love cheesecake. And I am a big fan of cream cheese frosting. So what could be better than a bread that uses cream cheese in the mix and the frosting? Actually, the cream cheese will keep the bread moist until it is gone (which is not very long at my house).
As you probably already know, I am also a big fan of Bisquick. It has been around a long time which, to me, is a testament to its success. When you use Bisquick, you can skip adding some of the ingredients because they are already included inside the mix.

Strawberries are in season here in south/central Illinois. In fact, we have had such a rainy spring this year I am surprised they did as well as they did. Although you can buy strawberries most of the year in the grocery store, they just do not compare to berries that are picked fresh out of the strawberry patch. If you live around these parts, you know what I mean.
It is best to dice the berries for this recipe for both in the bread mix and on top as shown below:
For this recipe, I used sliced almonds and almond extract. I like the combination of the almond flavor and strawberry flavor. I believe the two flavors are complimentary. However, next time I make this bread I believe I will use slivered almonds which should make the slicing of the bread easier.

What could be better than strawberry bread? A cheesecake version with cream cheese frosting.
- 4 ounces cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 2 1/2 cups Bisquick
- 1/4 cup milk
- 3 tablespoons oil
- 1/2 teaspoon almond extract
- 1 cup diced strawberries
- 1/2 cup almonds, slivered or sliced
- 2 ounces cream cheese, softened
- 1 cup powdered sugar
- 1/2 teaspoon milk
- 1/2 teaspoon almond extract
- 1/2 cup strawberries, diced
With a mixer, beat the cream cheese until smooth. Beat in the sugar. Beat in the eggs, one at a time.
Add the Bisquick and milk, alternating a little at a time, mixing after each addition until all of both are incorporated.
Mix in the oil and almond extract.
Stir in the strawberries and almonds. Pour mixture into a loaf pan that has been sprayed with cooking spray to prevent sticking.
Bake in a preheated 350 degree oven 50 to 55 minutes or until a toothpick inserted in the center comes out clean. Cool while preparing the frosting.
Using a mixer, mix the cream cheese until smooth. Add the milk, almond extract and half of the powdered sugar. Mix well. Add the remaining powdered sugar and mix until creamy. Stir in the diced strawberries. Spread on the very warm bread. Cool completely before slicing.
This recipe is just simply AMAZING. It’s easy to make & absolutely delicious!! I’m making right now for the 3rd time in a month. It’s a perfect snack or even breakfast! It’s almost like a no fail recipe too which I can appreciate. Ive made a few alterations, I add some strawberry extract in the batter & icing. I add one more oz of cream cheese for the icing, and only add a teeny bit of almond extract to the icing but use 1/2 teaspoon of the strawberry extract. It really brings out the flavor of the strawberries. I’m obsessed with this & have made it for my family who are equally obsessed!
