You are going to want to make this Easy Ham Cheese Quiche with Pineapple for your next weekend brunch treat. That’s because almost all the food groups are represented. You have eggs and ham for the protein, cheese, cottage cheese and milk for the calcium, and pineapple for the fruit.
I like to make mine with a pre-made pie crust, but you would not have to. It just happened that I had a pie crust that I needed to use. I also had some graham cracker crumbs that I sprinkled on after the cheese and before the pineapple. This is really optional, but I believe it gave it a little sweeter flavor. If you have some leftover ham you would like to use, this is a good way to use it. Seems like we always have ham leftover after holidays.

Easy Ham Cheese Quiche with Pineapple:

- 1 ready-made pie crust
- 5 eggs
- 1/3 cup cottage cheese
- 1/3 cup milk
- 1 cup diced ham
- 1 green onion, sliced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup mild cheddar cheese, shredded
- 1/3 cup graham cracker crumbs (optional)
- 8 ounces pineapple slices
Unroll pie crust, and form into a pie plate.
Whisk the eggs in a medium bowl.
Add the cottage cheese, milk, ham, green onion, salt and pepper and mix well.
Pour into the prepared crust.
Sprinkle the cheddar cheese over the egg mixture.
Optional: Sprinkle the graham cracker crumbs over the cheese.
Lay the pineapple slices on top.
Bake in a preheated 375 degree oven for about 40 minutes until the eggs look set and golden brown.
