Easy Peach Crumb Pie

The deliciousness never ends with my Easy Peach Crumb Pie. That’s because, in addition to the yummy peach filling, there is an oatmeal/brown sugar crumb topping to set it off.

Easy Peach Crumb Pie

We recently made a visit to Eckert’s Country Store and Farms for peach picking. Picking peaches is really so easy. The hard part is getting back to the wagon with a full box of peaches. We picked when the Loring peaches were in season. This is a top-notch peach–usually very big and full of flavor. It’s a great peach for eating, and, as I found out with this recipe, a great peach for baking. I chose to make this pie with a crumb topping; and the crumb topping starts with oatmeal.

This is the BEST peach crumb pie, and here is why:

  • When you start with fresh fruit, it is really hard to go wrong.
  • The oatmeal gives the topping a real nutty flavor.
  • This pie makes a really pretty presentation–perfect for serving guests.

How to make Easy Peach Crumb Pie:

  1. Peel and slice the peaches.
  2. Sprinkle the peaches with lemon juice to prevent the fruit from turning brown.
  3. Add the flour, sugars and pinch of salt to the peaches and mix well.
  4. Fill a deep-dish pie plate with a premade pie crust (or make your own).
  5. Fill the pie crust with the peaches.

  7. Cut in the butter.
  8. Pile onto the peaches and bake.

NOTES–The most important things about this recipe:

  1. Since this recipe contains pecans which tend to burn, it is important that you cover the pie during some of the baking time.
  2. You want the pie to bubble for at least 10 minutes to ensure that the peaches are tender.
  3. You want to use peaches that are ripe (they have some give when you lightly squeeze).
  4. Be sure to bake the pie on a baking sheet on the bottom shelf because it will probably boil over.

What should I serve with Easy Peach Crumb Pie?

Serve this delicious pie a la mode (a scoop of ice cream) or with a healthy dollop of whipped topping.

  • 6 cups peeled and sliced ripe peaches
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup flour
  • pinch salt
  • 1 premade pie crust
Crumb Topping
  • 2 cups quick oats
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 1/2 cup flour
  • 1/2 cup chopped pecans
  • 1/2 teaspoon vanilla
  • pinch salt
  • 5 tablespoons butter
  1. To a large bowl, peel and slice the peaches. Sprinkle with the lemon juice and mix well.

  2. Add the remaining pie ingredients and mix well.

  3. Unroll the pie crust into a deep-dish pie pan. Crimp the edges. Fill the crust with the pie filling.

  4. Mix all the topping ingredients together except the butter.

  5. Using a pastry blender or use 2 knives (in a cross-cutting motion) to cut the butter into the topping ingredients. When some of the butter crumbs resemble pea size, pile this on top of the peaches and spread around the edges.

  6. Place the pie on a baking tray because it will probably boil over. Loosely tent the pie with aluminum foil, making sure the edges are covered. Bake in this manner, on the bottom shelf, for 40 minutes at 425 degree preheated oven. Remove the foil and bake for another 30 minutes or until you see it boil for 10 minutes.

  7. Carefully remove the pie from the oven to cool.
