Garden Blueberry Salad with Shrimp

Garden Blueberry Salad with Shrimp
I recently went on a camping trip, and needed to prepare something to feed a large crowd. I looked in my freezer and found a package of small shrimp. My garden had recently started producing; so I had green peppers, zucchini, summer squash and tomatoes everywhere. I instantly thought this was the makings of a great salad–Garden Blueberry Salad with Shrimp!

Actually, this salad is a cross between a pasta salad, a garden salad and a shrimp salad. I knew I needed to tweak the dressing ingredients because my husband does not traditionally like the dressings in a pasta salad. He likes more of a creamy-based dressing. I did incorporate a southwest salad kit into this salad. However, I removed the packet of dressing and toppings that came with the kit to save for another use.
I really like the addition of the blueberries in this salad. In fact, I regularly add fruit to my leaf salads. I like the sweetness they add. The dressing is a combination of Miracle Whip, Marzetti’s Slaw Dressing and Raspberry Vinaigrette. A blueberry vinaigrette would also be delicious!
I topped off this salad with a little red pepper flakes to give it a pop of flavor and color. Garden Blueberry Salad with Shrimp makes a very large salad; so you might want to cut the recipe in half to serve just a few people. This recipe makes a very large, delicious salad. With the addition of the shrimp as a protein, it could qualify as a complete meal.
- 8 ounces pasta (I used bowtie)
- 12 ounces cooked small shrimp
- 10 ounces salad mix (any variety) (if dressing and toppings come with it, save those for another use)
- 1 medium zucchini, chopped
- 1 small summer squash, chopped
- 1 small green pepper, chopped
- 3 radishes, sliced
- 1 green onion, sliced
- 1 small tomato, chopped
- 1/2 pint blueberries
- 2/3 cup mild cheddar cheese, shredded
- 1 cup Miracle Whip
- 1/2 cup Marzetti's Slaw Dressing
- 1/4 cup raspberry vinaigrette
Boil the pasta according to the package directions. Rinse the shrimp well.
When the pasta has cooled a bit, add the remaining salad ingredients including the shrimp.
Combine the dressing ingredients and pour over the salad. Toss well.
Chill until ready to serve.
The blueberries really made this salad.
