Patriotic Berry Salad
Patriotic Berry Salad is a perfect summer salad because the fruits are so plentiful this time of year.
This salad is really a cross between a leaf salad and a fruit salad. You will find that the dressing is a little on the sweet side which makes it oh so yummy. You could use any combination of fruits and vegetables that you wish, but the dressing should be consistent with this recipe. For a recent gathering, I tried to reduce the sugar by taking out the brown sugar, and it was just not the same. It needs the brown sugar. In addition, I like mixing the dressing in a mason jar, and shake right before serving the salad. Finally, the dressing will keep in the refrigerator for a week. In summary, you will want to serve my Patriotic Berry Salad soon. Serve this salad alongside my Two-tone Lasagna.

Patriotic Berry Salad:

- 1 salad package kit, any variety
- 3 radishes, sliced
- 1 medium tomato, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup pepperoni mini's
- 1 cup sliced strawberries
- 1/2 pint blueberries
- 3 oz. feta cheese
- 4 oz. cream cheese, softened
- 4 oz. sour cream
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla
In a pretty bowl, layer the first 5 ingredients.
Line the perimeter top of the salad with the sliced strawberries.
Fill the center of the salad top with the blueberries.
Sprinkle the feta cheese over the entire salad.
Combine the last 5 ingredients for the dressing.
You may have to microwave the dressing ingredients at one minute intervals to get the cream cheese to go smooth.
Store the dressing ingredients in the refrigerator until ready to serve the salad.
Pour on top of the salad and serve.
