I have said it before; I love margaritas. They are my favorite hard cocktail. I like the original margarita and I like the fruit flavored margaritas. I have been making margaritas a number of years, and I have found that jams, preserves and jellies give the right amount of sweetness to a flavored margarita. In addition, they also add a little thickening to the drink.

Many of my recipes are created with ingredients that I have on hand. The pineapple was leftover from a carrot cake that I made. I also had the raspberry jam from another recipe I made. I always have tequila and Jose Cuervo on hand.

My blender is a 5 cup blender which I believe is pretty standard. Therefore, the measurements that I use in this recipe are based on this size. If yours is smaller or larger, you may need to adjust the ingredients a bit.

This cocktail recipe makes a somewhat thick drink because of the pulp from the pineapple. In fact, I like to whirl the pineapple with a little of the alcohol for a bit in the blender to pulverize the pulp.

  • 1 cup crushed pineapple with juice
  • 3/4 cup tequila
  • 1 cup Jose Cuervo margarita mix, no alcohol
  • 1/2 cup raspberry jam
  • 3 cups ice
  1. To a 5 cup blender, add the pineapple and half of the tequila. Whirl a bit until the pineapple is pulverized.

  2. Add the rest of the tequila, Jose Cuervo, raspberry jam and 2 cups of the ice. Whirl.

  3. Add the last 1 cup of ice and whirl again. Pour into large margarita glasses.
