If you like a good Italian beef sandwich, you are going to love my version of Slow Cooker Italian Beef with Pepperoncinis because the beef simmers all day in the sauce ingredients making the most tender sandwich ever.
I really don’t know what we did without our crock pots (aka slow cookers) before they were invented. I love to use mine. It makes everything I put into it moist and delicious. Beef is my favorite meat to cook this way, but I have also had good results with pork and chicken. You just put it in early in the morning, and by late afternoon your meal is done.
Slow Cooker Italian Beef with Pepperoncinis
The first thing you want to start with in this recipe is a nice beef roast. You could use just about any cut of roast–arm, rump, shoulder. If your roast has a lot of visible fat around the parameter, trim this off with a sharp knife. Much of the flavoring in this recipe comes from those little seasoning packets you get from the grocery store. I use an Italian dressing packet and an au jus gravy packet. I also like to use the juice from the jar of pepperoncinis. But you might find that a little too spicy for your liking. Just drain the pepperoncinis before you add them to the pot if you are not fond of “spicy” food.

- 3-4 pound beef roast
- 14.5 ounces beef broth
- 1 tablespoon minced garlic
- 1 packet Italian dressing
- 1 packet au jus gravy
- 1 large onion, cut into sections
- 18 ounces pepperoncinis, whole or sliced (if you do not like spicy, you will want to drain these)
- 8-10 buns of your choosing
If there is any visible fat around the parameter of the roast, trim this off with a sharp knife. Place the roast in the bottom of the slow cooker.
Add the rest of the ingredients in the order listed. No need to stir. Cover with the lid.
Cook on high for 8 hours. I like to flip mine over after about 4 hours.
After 8 hours of total cooking time, remove the lid and continue to cook on high for at least an additional hour to cook down some of the liquid.
Serve on your choice of buns. Serve the peppers on the sandwich or on the side.
