Cheesy Meatloaf Surprise

Cheesy Meatloaf Surprise is one of the best meatloafs I have ever tasted.  Not only is it extremely moist, but the cheesy filling is a little surprise in the middle.

  • 1 1/4 pound ground beef (80/20% blend)
  • 2 pieces bread, torn into small pieces (I Iike to use the heals of the bread)
  • 1/2 cup milk
  • 1 egg, beaten
  • 1/2 cup diced onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon each pepper, dry mustard, garlic salt
  • 1 1/2 tablespoons Country Bobs or other steak seasoning
  • 1 block of Colby/Monterey Jack cheese
  • 1/4 cup ketchup


  1. Preheat oven to 350 degrees.

  2. Mix all ingredients except the last two by hand until thoroughly combined.

  3. Mound onto the broiler pan in a long loaf shape.

  4. Make an indention down the center for the cheese placement.

  5. Cut off an oblong one inch diameter square of cheese, and place it in the indention.

  6. Form the ground beef around the cheese, and continue to form and shape until the cheese in completely hidden and the meatloaf has good shape and firmness.

  7. Spread the ketchup evenly over the meatloaf.

  8. Bake the meatloaf for one hour.

  9. Cool for about 10 minutes before slicing and serving.
