These buttermilk pancakes are made special with the addition of the oatmeal and pecans, giving them a delicious nutty flavor.
Mix all the ingredients together in a medium-size bowl, and let rest for 5 minutes.
Lightly spray a griddle with non-stick cooking spray. Preheat the griddle for a few minutes over medium-high heat.
Using a 1/3 cup measuring cup, scoop the batter in the cup and pour on the hot griddle. (you may need to adjust the heat down) When the pancakes start to bubble, carefully lift to see if they are medium brown before flipping.
Continue to cook the pancakes until all of the batter has been used.
Serve with your choice of butter, peanut butter, and/or syrup.
