Zucchini Casserole Recipe with Tomatoes

Ingredients

  • 1 medium zucchini
  • 1/2 medium onion
  • 1/3 cup parmesan & Romano cheese
  • 1/3 cup Italian bread crumbs
  • 14.5 ounces stewed tomatoes
  • 1/2 cup shredded mild cheddar cheese

Instructions

  1. Slice the onion. Separate the rings and spread around in a medium rectangle casserole dish that has been sprayed with cooking spray. Sprinkle the onions with half of the parmesan & Romano cheese and half of the Italian bread crumbs.

  2. Slice the zucchini and layer on top of the onion rings. Sprinkle on the remaining parmesan & Romano cheese and bread crumbs.

  3. Add the stewed tomatoes on top. You will probably want to roughly chop the tomatoes. Sprinkle the shredded cheddar cheese over the top.

  4. Bake in a preheated 400 degree oven, covered, for 45 minutes.
