If you are looking for a delicious recipe to use zucchini from the garden, you will be pleased with this one!
Slice the onion. Separate the rings and spread around in a medium rectangle casserole dish that has been sprayed with cooking spray. Sprinkle the onions with half of the parmesan & Romano cheese and half of the Italian bread crumbs.
Slice the zucchini and layer on top of the onion rings. Sprinkle on the remaining parmesan & Romano cheese and bread crumbs.
Add the stewed tomatoes on top. You will probably want to roughly chop the tomatoes. Sprinkle the shredded cheddar cheese over the top.
Bake in a preheated 400 degree oven, covered, for 45 minutes.
