White Chicken Enchiladas

I have been making this easy White Chicken Enchiladas casserole recipe for a number of years, and my husband just loves it.  You will be surprised at just how easy it is to make.

  • 1 chopped onion
  • 2 tablespoons butter
  • 1 tablespoon minced garlic in oil
  • 4 oz. can diced green chilies
  • 3/4 cup sour cream
  • 1 can cream of chicken soup
  • 3 cups cut up cooked chicken
  • 1 1/2 cups shredded Colby/Monterey Jack cheese
  • 6 6-inch flour tortillas
  • 1/4 cup milk


  1. Preheat oven to 350 degrees. 

  2. Saute onion in butter in large skillet, and when almost done, add minced garlic. 

  3. Add chilies, sour cream and soup. 
  4. Reserve half of this sauce in another medium bowl. 
  5. To remaining sauce in skillet, add chicken and half of the shredded cheese.
  6.  Fill each tortilla with 1/2 cup mixture, roll up and place seam side down in a 9 x 9 baking dish that has been sprayed with non-stick cooking spray. 
  7. Mix milk with remaining sauce and spoon over tortillas. 
  8. Mix milk with remaining sauce and spoon over tortillas. 
  9. Sprinkle remaining cheese over the top.
  10.  Bake for 30 minutes.
  11. Optional: serve with shredded lettuce, chopped tomato, salsa and additional sour cream
